I think there are at least two things at work here, Mike. It's certainly true that the use of generic terms keeps Vance's work timeless and you've pointed out examples: viewscreen, communicator, etc.
But I think that his description of hotels, inns and food (as well as a zillion other things like colors, music, ...) are special joys. Probably the merchant marine stint did it's best to enthuse Vance over the exotica of our own world and his special touch to make it work across the universe.
Finally, I think the food I most remember is pickled eel. In fact I was never much tempted by Vance's meals, but they certainly set the stage for his "culture word paintings". What did the Darsh eat? Something really disgusting. Anyone?
